Arabian Chicken Kabsa is one of the most popular and traditional dishes of Saudi Arabia and other Middle Eastern countries. Known for its rich aroma, colorful presentation, and flavorful taste, Kabsa is a one-pot rice dish made with spiced chicken, fragrant basmati rice, and a perfect blend of Middle Eastern spices. Often considered the national dish of Saudi Arabia, it is usually served on special occasions, family gatherings, or festive celebrations.
To prepare Arabian Chicken Kabsa, you will need the following ingredients: 1 whole chicken (cut into medium-sized pieces), 2 cups of basmati rice, 3 tablespoons of oil or ghee, 2 finely chopped onions, 3 cloves of garlic (minced), 2 medium tomatoes (chopped), 1 tablespoon tomato paste, 1 grated carrot, and 4 cups of hot water or chicken stock. For the Kabsa spice mix, you will need 1 teaspoon each of cumin powder, coriander powder, cinnamon, cardamom powder, cloves, black pepper, turmeric, and a pinch of ground nutmeg. Salt to taste and a few bay leaves add extra flavor.
Cooking Method:
Start by washing and soaking the basmati rice for about 30 minutes. In a large heavy-bottomed pot, heat the oil or ghee over medium flame. Add the chopped onions and sauté until they turn golden brown. Then add minced garlic, stirring for a minute until fragrant. Next, add the chopped tomatoes and tomato paste, cooking until the mixture becomes soft and releases oil from the sides.
Now add the Kabsa spice mix and salt. Stir well to combine all the spices with the tomato mixture. Add the chicken pieces and mix thoroughly, coating the chicken with the spice blend. Allow it to cook for 10–12 minutes until the chicken turns slightly golden and absorbs the flavors. Pour in hot water or chicken stock and add the bay leaves. Cover and simmer the chicken for about 25 minutes until it becomes tender and well-cooked.
Once the chicken is done, remove it from the pot and set it aside. To the remaining broth, add the soaked rice and grated carrot. Stir gently and adjust the seasoning if needed. Cover the pot and let the rice cook on low flame until all the water is absorbed and the rice becomes fluffy.
Finally, place the cooked chicken pieces back on top of the rice, cover again, and steam for another 5 minutes on low heat. This step helps the rice absorb the final flavors of the chicken and spices.
Serving Suggestion:
Serve Arabian Chicken Kabsa hot on a large platter, topped with roasted nuts, raisins, or fried onions for extra richness. It pairs beautifully with fresh salad, yogurt sauce, or spicy tomato salsa known as Dakkous.
