Chicken Tikka Recipe – A Delicious Indian Delight
Chicken Tikka is a world-famous Indian appetizer known for its smoky flavor, rich spices, and tender texture. Originating from the Indian subcontinent, this dish is a staple in North Indian cuisine and has found fans across the globe. Marination Process:
First Marination:
Start by cleaning and patting dry the chicken pieces. In a bowl, add chicken, a pinch of salt, and lemon juice. Mix well and keep aside for 15–20 minutes. This helps in tenderizing the chicken.
Second Marination:
In another bowl, prepare the marinade with yogurt, ginger-garlic paste, red chili powder, turmeric, garam masala, cumin powder, coriander powder, salt, and mustard oil. Whisk the mixture until smooth.
Add the marinated chicken to this spiced yogurt mixture. Coat the pieces thoroughly, cover the bowl, and refrigerate for at least 4 hours or overnight for the best flavor.
Cooking Method:
Grilling or Oven Baking:
Preheat your grill or oven to 200°C (about 400°F).
Thread the marinated chicken pieces onto skewers.
Place the skewers on a rack with a tray underneath to catch drips.
Bake or grill for 20–25 minutes, turning halfway through. Baste with butter or ghee for extra flavor and a golden finish.
Optional: Broil for 2-3 minutes at the end to get a charred, smoky effect.
Pan Method (If no oven):
Heat a non-stick or grill pan on medium heat.
Add a little oil and place the chicken pieces on the pan.
Cook on each side for 5–6 minutes until charred and fully cooked.
Brush with butter or ghee before serving.
Serving Suggestions:
Chicken Tikka is usually served hot with green chutney (mint-coriander dip), sliced onions, and lemon wedges. It pairs beautifully with naan, roti, or as a starter before the main meal. You can also wrap it in a paratha with salad and sauce to make a delicious chicken tikka roll.
